Leftover Coconut Milk

What can I do with half a tin of coconut milk that I have left over from last nights Thai Green Curry?

I've never used coconut milk before so I have no idea what to do with it. oops

Put it into a plastic container and freeze it until next time.

I do this all the time.  It works for me.

Also, thai green curry freezes well, so you could have cooked double and just frozen half the curry for another time!!

The other day for lunch I stir fried some cooked rice and vegetables with spices like turmeric and chilli and added some coconut milk, that was lovely smile

You could also use some in a smoothie? Bet it would be nice with fresh mango.

Thanks everyone. I put it in the freezer!

Moosy I was actually thinking of doubling the thai green curry and freezing it, but the chicken I used was already frozen and I didn't want to defrost it, cook it and then freeze it again. If the chicken was fresh I wouldn't have minded doing that.
