replacement for wine in recipes

we don't drink alcohol and some recipes have wine in them - eg risotto on this site. Can enyone suggest a replacement for white wine in a risotto or just in general?

The alcohol cooks out.

Anything you try will not taste the same, or similar.

But, if you insist, you can just leave it out.

Should we not replace the wine for something else to ensure that there is enough fluids in the recipe?

You could make up the volume of the wine with an appropriate stock.

You pretty much evaporate the wine, anyway, in a risotto.

As stated, just use stock.

Well, you could also try cider vinegar, apple juice, or white grape juice.

I also would just use a good stock instead of adding the wine with something like risotto.

Hi, well as it has been said the alcohol will go away but if thats not enough for you I would suggest that you try to find wine without alcohol. There's red and white, it shouldnt be hard to find.
