Coconut

My son has a severe nut allergy and it really bugs me when a lot of thai and curry dishes are ful of coconut as I end up not being able to cook them. ( I won't cook anything that has nut oils or nuts..)

What can I use to substitute coconut with in dishes??

You can just leave the coconut out of curry.  It will change the taste, but it will still be good.

You know what's the best substitute?

MILK. any milk actually. POWDERED OR LIQUID

I tried it. I was cooking curry the other night and I found out that I don't have coconut milk, I saw my powdered milk in my cupboard and diluted it in water. Then the result was great! My curry became yummy and rich!
