Rolled Shoulder of Lamb

Hi just registered today.  Help please.  I have bought a piece of rolled shoulder of lamb fo Dinner tomorrow.  Although I love cooking, I am hopeless when it comes to joints of meat.  Any sugestions on how to cook? tongue

this is how I do mine, fry off 1 onion, rosemary & 2 carrots, salt & pepper, sear the lamb, remove the lamb when browned, I then add a knob of butter to the veg a spoon of flour, 2 glasses of red wine, I cook till softened and add hot water to make a nice stock, then put the lamb and all the stock in an over proof dish with a lid, then cook for about 3 or 4 hours on a low heat, the lamb then falls off the bone and tastes great...

This is probably too late to do you much good, but did you know that Jamie has a wonderful recipe for slow-roasted shoulder of lamb right here on this site?
