Single or double cream ?
Hello all.
This is my first post so be gentle !
Iv been given the task of making a chicken and leek pie for dinner but i only have single cream. The recipe i have found (and most i have found) use double cream ?
Can i use single cream insted of double, and will there be a difference betwen using single ?
Im never really sure what cream to use in cooking.

I would use the single cream Loobyloo, it will just be a tiny percentage less rich. ![]()

Single cream will split easier, so you may have to allow the filling to cool a little, add the cream and then warm - allowing the extra water to evaporate and thickening the sauce.
In fact, assuming you have milk in the house, I would never bother with single cream as you can always "let down" double cream to single using milk if serving for pouring or for coffee.

Also perhaps don't use quite so much as Single cream is "thinner", & due to it's penchant for splitting, you won't want to have to reduce the sauce to get the right consistancy.
