EARTHMUM....thankyou for starting this thread...Mrs Wine~o is out with the girls tonight...so I am cooking for one.....
Mrs Wine~o will eat almost anything I prepare...with only two major exceptions....
I haven't made myself a Risotto in years... so much so that I've had pop out to the shops to buy Arborio rice..
Tonight then...broad bean and courgette (Home grown) Risotto...
Pork Loin with a Hoi-sin and balsamic glaze...
(the 2 thing Mrs. Wine~o doesn't fully appreciate...Pork and Risotto...)
as a final after thought...where a Risotto recipe calls for white wine...use a dry Vermouth instead...delicious...

Sounds good, Win-o. I too use Vermouth whenever a recipe calls for white wine.

there's no right or wrong answer with risotto, even in prestigious recipe books you'll find discrepancies..... I'm sure Jamie even does it differently from Gennaro,..... it's a free varied dish....

I think that the word "blasphemy" used concerning food is blasphemy...
The world is evolving and so are concepts and ideas and food is no different. Why not give it a try? For me blasphemy doesnt apply to food. Taste does.
I may not like it but if someone does...
I wouldnt ask or serve a fillet steak well done, yet many people will only have it that way.
In one of the times Madonna came to Portugal for a concert she stayed in a posh hotel and brought some bottles of Petrus along. Then in the middle of the meal she asked for 7UP and mixed it. That would be blasphemy in a lot of people's book. Not in Madonna...

I use Moscatel. Also a great alternative.
