Fruit Cake always crack on top
Hi my fruit cake (steam version) always have a crack top and only the crack part taste awful.
What can i do to avoid the crack for my fruit cake?
I've tried putting more layers of brown paper on top before putting it on a pan for steam and seems to be unsuccessful.
Pls help/advice, thanks

Mmm, never steamed a fruit cake, as such. However when baking if the tin/pan is too small for the amount of mixture it is liable to crack. check recipe for correct pan size.
Are you using baking powder? try cutting it back a bit, so as not so much rise.
