Bn b Nam Bộ recipe

Hi

I have recently been to Vietnam where I tried Bn b Nam Bộ. It's a noodle dish with shredded beef, crushed peanuts, shallots and vietnamese basil. I loved the dish and want to cook it at home but I can't find a recipe. Does anybody have one they would be willing to share?

Vietnamese Dinner Recipes

Ingredients: Metric Units
1 lb. rice vermicelli
salt
1 1/4 lb. rump steak
vegetable oil
pepper
2 lg onions, thinly sliced
1 lg cucumber, peeled, sliced thin
4 oz peanuts

Toppings, to each diner's taste
fish sauce
cold water
white vinegar/lime juice
sugar
chili flakes or chopped fresh red chili
Directions:
A delicious Asian dinner - it's not all rice, you know. Garnish the plate with lettuce.

A note on ingredients: fish sauce - Fish sauce, or nuoc nam, is a common ingredient in many Vietnamese dishes. It is often used as a condiment, think of it in the same vein as soy sauce or ketchup or chutney. If it's available in your local grocery store, it will be on the shelf in the "ethnic" aisle, alongside the black bean sauce and the Saigon sizzle sauce and the like. Or, use the link to order a bottle from Amazon.

Place vermicelli in large pot, cover with boiling water. Drain.

Bring a large saucepan of water to a boil. Add 2 tsp salt, vermicelli, boil 5 min.

Drain, rinse with cold water. Reheat by covering with boiling water.

Slice steak thinly. In a wok, heat a small amount of oil. Stirfry beef. Season with salt & pepper. Set aside. Add onions to wok and stirfry until soft.

Drain vermicelli (which has been waiting in water). Arrange in bowl, top with beef, onion, cucumbers. Sprinkle with peanuts. Bring toppings to table, allow each diner to dress their own noodles to taste. Or provide each diner with a small bowl to mix their own dipping sauce from the fish sauce, water, vinegar/lime juice, sugar, and chili. Pour sauce over vermicelli or serve alongside as a dip.

It sounds familiar but with a few difference. The recipe uses a different kind of noodle and when I was in Vietnam the dish didn't have cucumber in it.

Going to head to a bookshop later to try and find a recipe there

I found this in Bobby Chinn's book: Vietnamese Food.

Bun Bo - Serves two

100g beef fillet, thinly lice
5g coriander, chopped
20g shiso (japanese basil)
50g mixed salad
100g rice noodles
1 tsp vegetable oil
1 tsp finely chopped garlie
2 tbsp beef stock or water
50g beansprouts
2 tbsp Nouc Cham sauce

Marinade
1 tsp vegetable oil
1 tsp finely chopped lemongrass

Garnish
1 tbsp crispy-fried shallots
1 tbsp white sesame seeds
1 tbsp roasted peanuts

1. Marnate the meat for 15 minutes
2. Prepare each bowl by adding some of the herbs, the salad and top with noodles
3. Heat the oil in a pan to almost smoking point then add the meat and cook through
4. Add the chopped garlic and stirfry
5. Keep the heat high and deglaze the pan with the stock
6. Throw in the beansprouts, cover and cook for a minute then throw in the Nouc Cham
7. Spoon the beef into the bowls, with the pan juices and garnish
