That's interesting, Mada.  I googled frittata this morning and all sorts of combinations come up.  I've taken leftover grilled vegetables and put them in a frittata.  They only thing I require besides the leftovers in mine is cheese.  It's got to have cheese in it!  In Mexico they make a frittata of sorts with leftover tortillas and tomatoes called "Chilaquiles."

I always hide some parmesan and a squeeze of lemon in my frittatas and no also a few leaves of erba Luisa/ limoncina?????or cedrina maybe to change the eggs taste
