Homemade Yoghurt - Help Please..
Hi there
Can anyone please help me make homemade yoghurt?
I have tried using Jamie's recipe from his Oliver's twist DVD and I have not had success at all, after 2 days it is still liquid.
This is what I did:
I put 1ltr of milk in a saucepan & bought to a simmer, took off the heat put in a bowl, let cool to blood temperature (as per Jamie's instructions), then whisked in 200gms of live yoghurt, covered with foil then put in the fridge.
Hugh (the River Cottage guy) keeps his yoghurt warm, which did have bit better result, but I really liked Jamie's method.
I'm ususally quite good in the kitchen, but this yoghurt is really frustrating me!
Any thoughts, tips or advice would be most sincerely appreciated.

Hi Julieanne, I think it is most likely that your culture got too cold before it could take over the milk and thicken it.

go to the search button on the left and look for homemade yogurth you'll find many threads and tips
I do mine with two tbsp of full fat plain yogurth added to 1lt. best milk I can find and let it stand covvered with a shawl/scarf on the plastic wrap for at least 8 hours, not tremmbling on the fridge ..... and it works, then you can put it in the fridge, or even drain it through a musseline cloth on a colander (for a few hours in the fridge) and get a thick greek yogurth
good luck and try again (my mentor cuoco Roberto says every recipe has its own number of failures to go through before you dare saying you know how to do it properly

I would think that it is not working as it is far too cold as you are putting it in the fridge.
I think that if you follow Gandma Ma's advice then it should work a treat.

I just use a 1/2 cup of yogurt from the last batch as my starter. To get started on your first batch, you can just buy live culture yogurt from the grocery store to mix into the milk. I started with organic whole milk plain yogurt with my first batch. ![]()

Thanks - I love (almost) any recipe that lets me use my crockpot and free up some time/space in my kitchen. ![]()

I think you are right, I think it got too cold.
I will try the crock pot method, our house is quite cool, and I was trying to work out a way to keep the yoghurt warm, a crock pot sounds perfect!
