I hope this is in the right place. Venison for christmas..?
So each year I have 9 people to cook Christmas dinner for.
This year, I am pregnant and decided to give myself just 5 for dinner. Normally I cook a turkey, a glazed ham and usually also a beef joint with all the usual trimmings, 2 or 3 starters and similarly 2 or 3 options for dessert. Well, as there are fewer of us and the ones left, not so fussy eaters...I have decided to do something different I was thinking Venison? (I'll still do the glazed ham) but am stuck on what cut and how to prepair it. I was thinking perhaps a stuffed rolled haunch? Any ideas?
Sorry for the essay. ![]()

Sorry, I haven't cooked it myself. I had an excellent reindeer fillet (tenderloin) with blackberry sauce and have seen chefs do something similar with venison.
If you want to film yourself asking this, someone is asking for members to do this for Jamie's youtube. I am not sure what it's about. Have a look:

All I can say is it sounds tasty, but like MsPablo I've never done it myself. I've only ever made venison stew.
Surely someone has done this and could weigh in with some knowledge?

Thanks for the replies anyway
I have only ever cooked venison in diced form for a stew or a pie too so am a bit at a loss, can't find many recipes for a stuffed piece either. I know fillet would be lovely or cutlets but I'd want them served pink and thats not an option as I'm pregnant.
Suppose I could just wing it but I'd like it to be special, it's going to be the main xmas "da daa" after all
failing that change the meat to something else..?

You don't have to give up yet, but definitely ask your physician if wild game is safe, even cooked. I just read about some hunter in Pennsylvania contracting rabies from a deer that he killed and ate.

I'm in the UK, I'd be buying the Venison from a local Farm shop (in Essex actually, home of Mr Oliver himself). We don't have rabies and I know its reputable so I have no concern there ![]()
Thanks again.

Oh Good! I would have no qualms eating it in England.

If it was me I'd sear it and then put it in the slow cooker, but then I'd put anything in the slow cooker. I'd wash my clothes in the slow cooker if I could get away with it.

But actually, a braise might not be such a stupid idea. It's usually easier than open-roasting, especially for very lean meat.
