Diabetic food substitutions
I'll start the ball a rolling with my 'No rice, no sugar, low fat, low carb rice pudding'
Ingredients-
Semi-Skilled Milk
Oat Bran Porridge
Dislocated Coconut
Pearl Bailey
Instructions-
Lob ingredients at slow cooker (I use my Star Chef).
Imagine making a very runny porridge as you add ingredients.
Bring to boil then simmer on low until everything is lushiously soft.
Milk or Oat Meal Porridge can be added until you get a consistancy you like.
Scoff.
Smile.

I have to be honest Terry , the ingredients didn't exactly make me want to make this all I could think of was gritty porridge with pearl badly added !!!
Not quite the reaction you were hoping for I know !!!

koulouvagia, unless I'm very much mistaken, I think Terry means Dessicated coconut, where the lining of the nut is processed into tiny shreds. Terry, behave yourself!

Oat Bran porridge is very smooth especially when simmered for ages. Also long simmered pearl barley does soften up and take the flavour of their surroundings. Pearl Barley has the lowest GI of any beans and pulses and a GL much less than rice. Also it has no butter, sugar, cream, etc so it is very much healthier even if you don't have to be careful of carbs. It has a hefty helping of fibre and we all know how much that helps health.
Oh, I would rather have a clotted cream, full fat, low fibre, high carb, rice pudding, but thats the attitude that landed me with diabetes and a big fat belly in the first place.
I'm looking not for a more lush version. Just decent substitutes for things I can no longer have. ![]()
