Recipe for tortellini filling
Im going to attempt to make fresh tortellini but Im after ideas for fillings. Any recipes would be appreciated!
I do have jamies italy book and tobys italy book which ill have a look at, but thought i would ask here too.
I have most of my recipes on the computer, so I usually forget that I have cookbooks, not good I know!

PER LA PASTA:
- farina: 800gr.
- uova: 8
PER IL RIPIENO:
- polpa di maiale/PORK:150 gr.
- polpa di vitello/BEEF:150gr.
- salsiccia/SAUSAGE: 100 gr.
- prosciutto crudo/PARMA HAM:100 gr.
- mortadella:50 gr.
- uovo/EGG: 1
- parmigiano grattato/:150 gr.
- pane grattugiato:1/2 spoon
- burro: 30 gr.
- sale: q.b.
- noce moscata: q.b.
I think that would be difficult to find all ingredients in australia.
Anyway the important think is to prepare a good hit quality broth/brodo.
Carots, onion, meet, water, salt...and leave on the fire almost 2 hours.

stega.. your english is alot better than my italian but between the two of us i might help to tanslate a bit.
PER LA PASTA:
- farina: 800gr. (flour probably pasta flour would be best)
- uova: 8 (eggs)
PER IL RIPIENO:
- polpa di maiale/PORK:150 gr. (ground/minced pork)
- polpa di vitello/BEEF:150gr. (ground/minced beef )
- salsiccia/SAUSAGE: 100 gr.
- prosciutto crudo/PARMA HAM:100 gr.
- mortadella:50 gr.
- uovo/EGG: 1
- parmigiano grattato/:150 gr. (grated parmesan)
- pane grattugiato:1/2 spoon (italian style bread crumbs.)
- burro: 30 gr. (butter)
- sale: q.b. ( salt ) qb means quanto basta..
- noce moscata: q.b. ( nutmeg) just enough or to taste

It sounds like a great filling, it seems like it would make alot though. It should be good to freeze if you do them up individual on a tray first then put them in a freezer bag after they have frozen.
I think i will try this recipe myself soon.. will tell you how it turns out.
this weekend i will be making some gnocchi but may sometime in the next few weeks.

stega, this seems yummie. Though the site is in Italian, but very nicely demonstaring how to make tortellini. Maybe I try. I have friends in Bologna, but I can tell, that pasta is really most fantastic in that city!

I forgot to mention that Im looking for mainly vegetarian recipes, you know the usual cheese and spinach type fillings. I have gone off meat lately for some reason.
