For quick and dirty cooking for one, I use a wok and rustle up a stir fry or in fact practically anything, even stuff you'd normally make in a casserole.
Learning to cook is a handy skill for a guy on his own, most of the ladies out there love to be cooked for and even if it is just one signature dish you do really well it will be appreciated, see Jamie's latest vids on his blog for a list of aphrodisiacs to use.

Cooking for one person sucks.....
As a chef I have to taste everything so by the time I prepare a meal I am full.
I always say a chef never eats food, he tastes it!
