carrot cake!
bought some carrot from a bakery today just out of curiousity, it didnt kill me an thought it was amazing can anyone aid me in making my own(never baked before but my mum promised me she would teach me how to make her ledgenary choc brownies one day,think she doesnt want to tell me so i keep calling round!)

Here is my carrot cake recipe which I'm happy to share with you.
Carrot Cake
175 grams soft brown sugar
175 ml oil
3 large eggs -- beaten
140 grams carrots -- finely grated
100 grams raisins
1 large orange -- grated zest only
175 grams SR flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg -- freshly grated
Prepare a 18cm square tin. Pre-heat oven to 180C, Gas 4.
Put sugar, eggs and oil into a large bowl and mix together.
Stir in the carrots, raisins and orange zest.
Mix together the flour, bicarbonate of soda and spices. Sift into the bowl of mixture.
Lightly mix until just evenly blended - do not over-stir.
Pour the mixture into the prepared tin and bake for 45 minutes until firm and springy.
Cool for 5 minutes in the tin, then turn out onto a cooling rack.

make sure you put the cream cheese icing on it
in fact cream cheese icing is great on tomato soup cake too
yes there is a cake made with tomato soup
