Quick question for Zorzou about cheese
Hi Zorzou,
What is the Greek cheese that can be fried/grilled? In Cyprus we can do that with Halloumi but I had a cheese in Athens cooked the same way. I've tried the usual Greek cheeses suck as Kaseri or Kefalotyri but they are not the ones I'm looking for. Any ideas?

Re: Quick question for Zorzou about cheese
Is it formaella? A traditional cheese from a village called Arahova and its name is "protected" like feta. Or it's graviera another cheese cooked this way....

I think it was likely Graviera, made as Saganaki. I need to get hold of some and play around with it.

Re: Quick question for Zorzou about cheese
Oh graviera, its not actually an original greek cheese... Its named after -I think an Italian- village called Gravier and there they make this kind of cheese... so farmers here who make it similarly call it graviera!!
That's only informative, the taste is anyway the same! ![]()

I'll keep my eyes open for some formaella, not seen any here before but it sounds divine.
