Caster sugar substitute
Gah! Run out of caster sugar and need it for a cake I'm baking for tonight. The supermarket shuts in eight minutes so I'll never make it. We do, however, have some icing sugar. Can I substitute? I need a cupful of caster sugar, so would I still need a cupful of icing sugar? ![]()

Anna, I do not think that I would use icing sugar,I would just use granulated sugar instead. Sometimes if you use granulated sugar you get a slight spottyness on the top of the cake but it tends to taste ok .

Don't have any granulated either! Have literally just mixed it, ended up using a combination of one-third of a cup caster sugar (found some lurking at the back of the larder) and light brown sugar... Hope it won't be a disaster! Thanks Mummza.

OK, know this is way too late for your kitchen dilemma, but what about next time giving the granulated sugar (if you have it), a "pulse or so" in the food processor?
Careful, or you'll end up with icing sugar!

oh my god, i was just about to post the same thing!! i was running out last time... its true, if you are only ever stuck with granulated, just pulse it a little...
although on this occassion i know you didnt have any granulated sugar Anna, just a good tip i guess?
