special occasion outdoor cooking

I'd like to cook a special meal for my soon to be husband on his birthday. The thing is, we'll be camping & I'll have one ( jamie oliver!) camping stove.

Any ideas?

Now is the time to buy a barbecue! Even a d8sposable one will do for now. If buying disposable, get a couple.

This gives you a lot more flexibility, and enables a widrvariety of meals to be cooked.

What you cook depends on what you can get - and on your confidence and abilities. To make your meal extra special, look around the area ewhere you are camping, and see if there are any local specialities - and think of ways that these can be made into a memorable meal. We used to camp a lot (everywhere in England, Scotland, Wales - and France). There is almost always some local dish that is worth trying. Be imaginative!

Great Outdoors Potatoes     

Ingredients :

6    x    Potatoes
1/4    cup    Olive oil
2    tsp    Lemon juice
1    tsp    Dijon mustard
1/2    tsp    Corriander
1/2    tsp    Fresh ground peppper
1    tsp    Minced onion
1    x    Pureed garlic clove
1    tsp    Paprika

    Method :

     Scrub potatoes and cut into quarters, keeping skins on. Boil until tender, and coat them with the dressing which you can prepare in advance. Wrap the potato quarters in tin foil, and place on coal to brown. Delicious with meat or fish.

Grilled Marinated Flank Steak

Flank Steak (1-2 lbs feeds 2-3 people)
1 cup soy sauce
4 garlic cloves
1 cup olive oil
1/2 cup vinegar
2 Tbls. sugar
2 Tbls. honey
Pinches of salt and pepper
1/2 tsp. each of thyme, parsley, oregano
Hot sauce (optional to taste)
Crush garlic cloves then combine in coverable bowl with other ingredients. Place flank steak into marinade and cover bowl.

Grill and slice thinly. Serve with mushrooms, peppers (red, yellow or green), onions that have been steamed in tin foil on the grill with olive oil, salt and pepper.

Condiments include hot sauce and/or homemade BBQ sauce

Steak Fajitas

4 tbsp. extra-virgin olive oil
1 tsp. ground cumin
1 tsp. chili powder
4 garlic cloves, crushed
Juice of one lime
1 lb. skirt or flank steak, sliced
2 peppers, cut into 2-in. pieces
1 red onion, cut into wedges
Flour tortillas

Thaw steak, if necessary. Heat grill. Thread meat, peppers, and onions onto skewers, alternating as you go. Grill skewers, turning them frequently, for 5 to 8 minutes. Serve with tortillas and desired toppings

Fried Bananas

1 banana for each person
1 spoonful of butter
2 spoonfuls of sugar
1 spoonful of cinnamon
Put butter in pan. When butter is melted, put in bananas. Add sugar and cinnamon when banana begins to brown
