Isn't the rule of thumb  presentation side first?
So i guess it depends on whether you want to serve it skinside up or down on the plate.
i will usually sear off skinside first, like anna , then plate skinside up.

With poultry I would do that but with salmon I would plate it skin side down. lol

Yeah - Jamie showed his students how to do this in their "test" to advance to the next round in Jamie's Kitchens.  Skin side down first!

I guess I wont advance to the next level then, lol! But I will try it next time round and see if there's a difference, but my salmon is pretty good otherwise...

Thank you all so much for your help...some very good tips there, I shall try them out when I get my new kitchen...currently living on microwave cooking, not very inspiring!!

Another tip for crispy salmon skin:

Make very thin slices with a very sharp knife, crossways accross the fillet, about 5mm apart and no more than a few mm deep.  Makes the skin crisp beautifully.

Yep, u can eat the fish skin, by that stage it would be nice and crispy!!!
