HI GUYS ANYONE KNOW HOW TO MAKE BABAGANNUSH

hI Everyone, it's been over 12 months since I've been on the forum..Life hey..busy busy busy....spent the summer rescuing snakes and wildlife round Brisbane.......but I'm back big_smile  and was wondering if anyone knew how to make babagannush.. Had it at a lovely resturant in Brissy the other night and even the kids loved it........yummo.

Loving Jamie at home....very inspired to cook cook cook and eat of course. 

Can't wait to try out some of your guys recipes...I'm a veggie but some of my family eat meat....so let's get cookin.

Here is my recipe:

I put an whole eggplnt in the oven  with some water in the tin and cook it till it is soft in the inside.
Then i peel it and mix it with some oil, lemon, sugar, arabian spices, salt and cinnamon (as it was a mayonnaise).
Love to eat it with pittas (arabian bread)

   1 1/2 lb Eggplant
       3 tb Lemon juice
       1 ts Salt
       2 ts Minced fresh garlic
       3 tb Sesame tahini -- (optional: substitute yogurt or sour cream)
     1/4 c  Chopped parsley
     1/2 c  Toasted pine nuts
       2 tb Olive oil
 
   Preheat oven to 400 degrees F.  Prick eggplant all over with a fork.
   Bake whole until tender (about 30 minutes).  Remove from oven, halve
   and scoop out the flesh.  Blend in a food processor with the lemon
   juice until smooth.  Mash the salt and garlic together and combine
   with the eggplant, along with the tahini.  Cool and stir in the
   parsley and pine nuts. Before serving, drizzle with the olive oil.
