Killer BBQ Prawns that will Impress the future in laws


I would love to hear from anyone who has a killer BBQ Prawn recipe. My future in laws are coming around this coming weekend. Its the first time they've come around and I want to make an impression. They are Italian and are incrediable cooks.

I recently saw Jamie on the television BBQ Prawns, black muscles, etc, and he had them under a pyrex dish so that they steamed as well as BBQ'd.

Does anyone know this recipe?

Thai-style mango salad with griddled prawns by Jamie Oliver.

• 20 large, headless tiger prawns
• 1 ripe mango, peeled
• 2 handfuls of bean sprouts
• 3 small cucumbers, chopped
• a small bunch of fresh coriander, leaves picked
• 1 red pepper, deseeded and cut into thin strips
• a bunch of spring onions, chopped
• sea salt
• a small handful of sesame seeds
• extra virgin olive oil

for the marinade
• a thumb-sized piece of fresh ginger, peeled and grated
• a small bunch of fresh coriander, leaves picked and chopped
• 1 fresh red chilli, deseeded and chopped
• 4 tablespoons fresh lime juice
• 3 tablespoons extra virgin olive oil
• 1 tablespoon sesame oil
• 1 tablespoon soy sauce
• a good pinch of brown sugar
• 1 clove of garlic, peeled and crushed

Get yourself four wooden skewers and slide 5 peeled prawns on to each one. For the marinade, mix together the marinade ingredients. Drizzle half the marinade over the prawns.

For the salad, destone the mango and cut it into thin strips. Mix with the other half of the marinade, the bean sprouts, cucumber, coriander, pepper, spring onions and some sea salt.

Fry the sesame seeds in a large, dry frying pan until golden. Remove and set aside. Fry the prawns over a high heat for 2 minutes until cooked through.

Divide the salad over four plates. Place a prawn skewer on top of each plate, sprinkle with sesame seeds and drizzle with a little olive oil.

serves 4

BBQ Prawns

You need:
1 kg green (uncooked) prawns
4 lime leaves, shredded into fine strips
2 tsp olive oil
2 tblsp lemon juice
2 cloves garlic, finely chopped (or 2 tsp from jar)
2 tblsp chopped coriander (or 2 tblsp from jar)
1 tblsp fish sauce
2 small chillies, finely chopped (or 1 1/2 tsp from jar)

Mix together the lemon juice, fish sauce, garlic olive oil, shredded lime leaves, chilli in a glass bowl.

Add some salt and freshly cracked black pepper.

Add the prawns and mix well.

Marinate for about 1/2 an hour.

Cook the prawns on a hot BBQ or frypan for 2-3 minutes each side or til they turn pink.

Add the coriander just at the end.

Serving Suggestion: Serve with a nice tossed salad.

Well, I dont have a recipe as such but I ordered grilled prawns off a fancy new chinese restaurant the other day... absolutely out of this world!!!!!!

They were those huge prawns from madagascar you find in shops, left whole with head and tail and just grilled.... they then splashed them with a sweet yet light and very liquid sauce and there were pieces of root ginger in the sauce.. well the taste of the ginger made things taste wonderful...

(I'm still licking my fingers!)  oops

Maybe an idea to try out ?! couldnt tell you what was in the sauce (tasted a bit like sweet and chilli sauce without the heat of the chillies!)...
