vegeterian disshes

hi i was wondering if anyone had any really good vegertian recipies with out ony meat fish or eggs here is one i really like can be searved hot or cold


you will need
2 heads of brocoli
1 lrg sweet potato
1 block hard tofu
hand full freash snow peas
handfull of bean shoot sprouts
soy sauce
sesemae seeds
1 lemon


1. steam brocoli till just cooked and set aside
2. par cook sweet potato in cubes then finish of by deep frying
3. cube tofu and deep fry or pan fry
4. cut off tips of snow peas and blanch in hot water
5. put in container till cold
6. in a pan put one tablespoon of olive oil and throw in a handfull of sesemae seeds brown. once brown pour in soy sauce. till it has stopped steaming. cool then squeeze lemon juice into it

mix all together and serve hot or chilled
great summer salad with crusty toast

I posted a recipe for a vegetarian curry that's dropped to the second page. Here it is again

Ingredients

6 small vine tomatoes
2 red sweet peppers
2 tsp mild Madras curry powder
2 tbsp dried curry leaves
2 lemons
A generous amount of Double Cream (I should really learn how to measure this!)
1 tsp cornflour
1 tbsp cold water
1/2 brown onion
1 glass white wine (Chardonnay)
2 cups long grain white rice
2 tbsp extra virgin olive oil

Method

Slice the peppers and onion
Halve the tomatoes
Toss into a mixing bowl
Zest and juice the lemons into the bowl
Add the leaves, powder, wine and cream
Boil the rice as per normal (10 minutes simmering in boiling water)
While rice is boiling, heat the oil in a medium skillet
Add the curry mixture and cook on a medium heat till the tomatoes are soft
Mix the water and cornflour together
Add a little of the curry sauce and combine
Pour back into the curry and mix thoroughly
Serve into 2 bowls

pumpkin barley risotto

Ingredients 
2 Tbs olive oil
1 to 2 cups finely chopped pumpkin
1 onion, chopped
2 cloves garlic, crushed
Dash vegan white wine (optional)
2 cups pearled barley, soaked for at least one hour
pinch dried thyme
pinch sugar
6 cups boiling water
2 Tbs stock powder
Either half bunch basil, NOT chopped
or
6 to 8 leaves sage
Squeeze of lemon (optional) 

Instructions  Heat the olive oil in a large casserole pan or a wok; add onions and pumpkin and fry until everything is getting brown.
Add the garlic, salt and pepper, sugar, thyme and sage leaves, if using.
Fry til all is nicely browned and caramelised.
Add the drained barley and the white wine, and stir until the wine is evaporated.
Add the water and the stock powder.
Add whole leaves of basil.
Simmer with lid, if possible, for an hour, checking water level; it should be a little wet but not a soup; like risotto made with rice.
Sprinkle with a touch lemon juice, if you like a little sharpness with the dish (optional).
Serve, with slow oven roasted tomatoes (done by cutting a few tomatoes in half, sprinkling with a little salt and sugar and garam masala, then spraying with olive oil spray and roasting in an oven with pilot light on for 8 hours) and fried garlic mushrooms. 

Broccoli with Peanut Sauce, Coriander and Basil

Ingredients 

360 g broccoli
1/2 tsp salt
2 tbsp peanut oil
4 kaffir lime leaves
2 tbsp crunchy peanut butter
120 ml canned coconut milk
20 fresh basil leaves preferably lemon basil
1 tbsp Pepper and Coriander Paste
1 tsp palm sugar or brown sugar 
Instructions 
Blanch broccoli for 2 mins in a little lightly salted boiling water, lift out broccoli and save cooking liquid. Heat peanut oil and fry Pepper and Coriander Paste on medium low heat, stirring constantly until fragrant. Add coconut milk mixed with 120 ml of cooking liquid and stir as it comes to a simmer. Stir in the sugar, salt, lime leaves and broccoli, simmer for 5 mins. Add peanut butter and dissolve in sauce, pressing with the back of the spoon to disperse. Stir in basil leaves and serve with rice.

Carrot & Leek Parcels with Garlic & Basil Sauce

Ingredients 

3 cups grated Carrots
1 leek sliced
1 egg lightly beaten
2 Tbsp chopped parsley
2 Tbsp sunflower seeds
250g ricotta cheese
30g butter
6 sheets filo pastry
45g melted butter extra
1 Tbsp breadcrumbs

BASIL SAUCE
15g butter
1 clove of garlic crushed
1 Tbsp of wholemeal flour
3/4 cup milk
1/2 cup cream
2 tbsp chopped fresh basil
1 tbsp grated parmesan cheese 
Instructions  Fry Butter and leeks till soft
Add grated carrot, sunflower seeds, ricotta cheese, egg and parsley and mix well.

Wrap mixture in filo pastry into logs. Coat with butter and bake for 20-30 mins at 180-200 degrees.

Meanwhile make sauce by frying garlic in butter. Add cold milk then flour and whisk on medium heat until thickened. Add cream and fresh basil then drizzle over parcels when ready.

thanks for all the recipies guys it is a big help. i have grown up with being a vegeterian and you get stuck in what you cook. with the welsh rarebit that jamie did on last weeks show i was wondering if you guys had any idea what i could use injstead of the egg to hold it together. let me know your thoughts thanks

What is a good substitute for eggs?

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.
