Curry and Chips
Hi All
I live in Australia and watch a lot of English programs,have seen people eating chips with a curry sauce.
We
don't have that in Australia,does anyone know how I could make the curry sauce?

Chip Shop Curry Sauce is something of an acquired taste - but if I were you, I wouldn't bother to acquire it.
The authentic stuff, as found in chipshops thoughout the land, is very simple to make - the complete recipes is a follows:-
Take one bag of industrially manufactured Cip Shop Curry Sauce Mix, add to 1 gallon tepid water, mix well and bring to the boil. Keep warm in a double boiler for the rest of the day, serving and topping up as necessary.
The colour and consistency should resemble that of thin diarrhoea ![]()
But you really didn't want to know that.
OK - here's a recipe to produce an approximation of it:-
Chip Shop Curry Sauce
Ingredients
Serves: 4
1 Medium Onion
1 Medium Apple
1 Tablespoon Curry powder
2 Tablespoon Oil
2 Tablespoon Plain flour
600 ml Water (1 pint)
1 Tablespoon Tomato purée
Lemon juice
Salt and pepper
Method
Chop the onion and apple and fry with the curry powder in the oil until tender.
Stir in the flour, cook for 2 minutes and then remove from the heat and add the water, tomato purée, salt, pepper and lemon juice to taste.
Simmer for 15 minutes.

another version poplar with chips is chinese curry sauce like u get from a takeaway
Ingredients
• 2 tbs. oil
• 3 cloves garlic, chopped
• 1 inch piece ginger, peeled and chopped or sliced
• 2 tbs. plain flour
• 2 tsp. curry powder (Madras or similar from Chinese grocers)
• 2 tsp. salt
• 1/2 -1 tsp. chilli powder (depends upon how hot your curry powder is)
• 1 tsp. sweet paprika powder
Instructions
1. Mix curry powder and flour in a bowl and keep aside.
2. Heat oil.
3. Add ginger and garlic and stir fry for 1-2 minutes.
4. Add flour and curry powder mix and allow it to bubble.
5. Add salt, paprika and chilli powder. Stir.
6. Add enough water, a little at a time, to get sauce consistency. Bring to boil and simmer briskly for a few minutes. Turn the heat off. This is the basic curry sauce like the ‘take-away, shops and people generally buy it with chips/French fries, as a dipping sauce.
7. You can also use it to make take-away style curries. When you are ready to cook a curry, like chicken, prawns, pork or boiled potatoes etc., heat 1 tbs. oil in a wok, stir-fry the chicken/prawns/meat/potatoes and add the curry paste. Continue to stir-fry for a few minutes. Add a little water, if you want more gravy.
8. Serve hot, with rice or chips!
