More "ground barbecue"
Here in Brazil we like to use this barbebue in the ground. here we call it "fogo no chão" "fire on the ground", is very nice.
The only diference is that we use "wood" insteed of charcoal. Nice "eucalipt", veryclean and dry wood.
For meat, we only put the seasalt "the same of the fish of the podcast", and we put on a stick 30cm away of the fire. The meat usually take 2 hours or more to cook and you have to turn the meat sometimes. All this work worth it! This kind of barbecue gives a characteristic taste to the meat beacuse of the steam, is very nice, specially if rips.

TO drink, a "caipirinha is very nice"
"Chachaçá" with lemons, sugar and ice. You can put vodka instead of cachaçá
2 ounces of cachaça
Sugar to taste
Wash the lime and roll it on the board to loosen the juices. Cut the lime into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle. (We have a long, wooden one from Brazil, made specifically for this purpose.) Just enough to release the juice, otherwise it'll get bitter. Add the cachaça and stir to mix. Add the ice and stir again. It is delicious and potent!

That reminds me of Fogo de Chao.. awsome resterrant in Atlanta..same sort of principle but indoors!
The choices of perfectly cooked meats and salads ...well.. all I can say is..my families favorite Shame we live so many miles away!
