Re: How do you make Yorkshire Pudding?
Yorkies Pork Pies are available, but ony in Thailand as far as I am aware - no reference, but I know the eponymous Yorkie from when I performed their marriage.
We take our Pork Pies seriously in Yorkshire - and there are two annual competitions, very hotly contested to, to judge the quality of the pies.
There is the Great Yorkshire Pork Pie, Sausage and and Products Competition, run by the Confederation of Yorkshire Butchers Councils (There were over 300 entrants this year!
http://www.greatyorkscomp.co.uk/
And there is the annual Charity Master Pork Pie Maker Competition, run by the Yorkshire based Pork Pie Appreciation Society (members meet weekly to discuss all thing pie related):-
http://www.porkpieclub.com/
Then there are competitions strictly for amateurs, such as the 'Men Only' Leeds Arms Pork Pie Competition in Scarborough:-
http://www.bbc.co.uk/northyorkshire/con … lery.shtml
Then there is the Biennial National Food and Meat Exhibition at the NEC in Birmingham, where Yorkshire pork pies normally take the prizes in all pork pie classes.

So yes, up in Yorkshire we take our pork pies seriously
I've been known to drive 30 miles just to buy a pie - though fortunately we can get award winning pies just down the road in Brighouse from Jones the Butcher:-
http://www.jones-butchers.co.uk/introduction.htm
There, there are also the Yorkshire Pudding Championships :-
http://www.spenboroughguardian.co.uk/co … 4554123.jp
(I'd love to share the winners Yorkshire Pudding Recipe with you, but its a closely guarded secret and rumour has it that if anyone steals it, da boys will be round to see to you
)
A previous winner, Dorothy Gavin revealed her secret - “I use three eggs, the only liquid is water and I’ve never measured anything in my life – I just guess the quantities."
and even the Annual Yorkshire Pudding Boat Race:-
http://www.theshed.co.uk/boatrace.html
So - don't go sullying the good name of Yorkshire Pork Pies and Yorkshire Puddings by crossing them to produce a mongrel Yorkie Porkie Pie.
And a big line of smileys to say I'm not serious (although all the above actually exist.

Re: How do you make Yorkshire Pudding?
Just to let you know, Jamies yorkshire puds turned out PERFECT!! We can't get them here in NZ and since I lived in Gloucester for 10 years and have an English husband) It's great to be able to make these just as I remembered.
I think it also helped that the eggs were fresh out from under my own chickens ![]()

Yorkshire Puffs
1 egg
1 cup milk
1 cup flour
1/2 teaspoon salt
Beat the egg slightly, add milk, flour and salt and beat briskly for 2 minutes, until smooth. Allow to stand for 1 hour. Grease 10 muffin pans generously with either fat from the roast or butter. Divide the batter evenly among cups, filling about one-third full.
Bake at 200c for about 45 minutes, until a rich golden colour. Serve immediately.

Re: How do you make Yorkshire Pudding?
This one works for us every time....
1 cup plain flour
1 cup beaten egg
2/3 cup milk
1/3 cup water
salt to taste
Pre-heat the oven to 230C/450F/Gas Mark 8.
Get a muffin tin or large roasting tin.
Put a large lump of lard into each muffin hole or the roasting tin.
Put the flour in a bowl and mix in the salt.
Whisk in the egg, milk and water a little at a time until it's all combined.
Heat up the lard in the oven until it's smoking.
Add the batter to your muffin tin quickly so that it doesn't cool down, half fill each hole (if you're using a roasting tin, tip it all in).
Cook for 25-30 minutes.
Enjoy!

I always ensure there is plenty of "air" in the batter (loads of air bubbles!) by giving it a brisk whisk just before pouring the batter in to the hot oil.
I also like Seasoned Pudding....just a Yorkshire Pud with added Onions and Sage....Yummy! Making one for Dinner tonight ![]()
