SOUP RECIPE FOR 80 PEOPLE PLEASE

Can anyone give me suggestions on lovely winter warming soups? We have a quiz in aid of the Air Ambulance and need to feed 70 on soup - so thought 1 veggie option and 1 with meat? but need to keep out costs down and also keep it tasty! Thank you

I cannot adjust this to 70protions...

however I made it yesterday

I chopped an onion, table spoon of olive oil, salt and pepper in the pot....diced 1 large potatoe and 6-7 brown mushrooms, a lump of crashed garlic...put in pot and add a hint of water until I
add a piece of celery root...half a carrot and a piece of leek...add water leave to boil

I dice 1 carrot, 1 leek and chop some parsley(a handful) and add almost to the end, when potatoe is boiled....this way I keep veges crunchy....(if you want them soft then add from beginning)

(the big chunks of leek and carrot, and celery root which are soft in the end I take it out...cause I don't like melting veges)
simple, not expensive

was about 6 portions

Hi ExMoor

I would suggest contacting Pret - they make lovely fresh homemade soups and on mass for their shops on a daily basis. I'm sure if you explain that your requirements is in aid of a good cause (air ambulance) they should be happy to help you to adjust a receipe for such a large audience.

Vegetable Soup - Irish Style
INGREDIENTS
17 carrots, chopped
17 large potatoes - peeled and cubed
5 parsnips, peeled and diced
5 turnips, peeled and diced
5 leek, sliced
3 onions, chopped
70 g dry potato flakes (optional)
salt and pepper to taste
1 litre water, or as needed

DIRECTIONS
Place the carrots, potatoes, parsnips, turnips, leek and onions into a large saucepan.
Fill with enough water to cover.
Bring to a boil and cook until the vegetables are tender.
Drain off water and puree vegetables in a blender or using a stick blender.
Return the puree to the saucepan and stir in water to reach your desired thickness. Heat to a simmer and season with salt and pepper

Sausage Tomato Soup
INGREDIENTS
1.3 kg bulk Italian sausage
640 g onion, chopped
5 small green peppers, chopped
5 cans (28 ounce) diced tomatoes, undrained
5 cans  (14.5 ounce) beef broth
5 (8 ounce) cans tomato sauce
690 ml picante sauce
35 g sugar
8 g dried basil
4 g dried oregano
330 g shredded mozzarella cheese

DIRECTIONS
In a saucepan, cook the sausage, onions and green peppers over medium heat until meat is no longer pink; drain.
Stir in tomatoes, broth, tomato sauce, picante sauce, sugar, basil and oregano. Bring to a boil.
Reduce heat; cover and simmer for 10 minutes.
Sprinkle with cheese.

Spanish Garlic and Vegetable Soup
INGREDIENTS
90 ml olive oil
17 large carrots, peeled and diced
5 medium heads cabbage, chopped
3 heads cauliflower, chopped
11 leeks, sliced
35 cloves garlic, finely chopped
5 (14.5 ounce) cans diced tomatoes with juice
135 g tomato paste
6 litres water
345 ml milk or light cream
85 g butter
salt and pepper to taste

DIRECTIONS
Heat oil in a large pot over medium heat.
Add carrot, cabbage, cauliflower and leeks.
Cook, stirring constantly, for a few minutes until cabbage wilts.
Stir in the garlic and tomato paste, and continue to cook for another minute or two, stirring constantly to prevent the garlic from burning.
Stir in 1 1/2 litres of water, then cover and simmer for 10 minutes.
Pour in the diced tomatoes and the remaining water, and return to a boil.
Reduce heat to low, cover and simmer for 20 minutes.
Reserve 10 cups of the liquid, and puree the remaining soup in a blender or food processor.
Return the blended mixture to the reserved liquid, and stir in milk and butter. Return to a boil, and cook for 1 minute. Season to taste with salt and pepper, and serve.

"Traditional Peruvian Chicken Soup
INGREDIENTS
17 skinless, boneless chicken breast halves - cut in half
salt and pepper to taste
520 ml olive oil
480 g onion, chopped
10 g minced garlic
30 g seeded, minced serrano chile
100 g chopped cilantro
660 g green peas
675 g corn
2 red bell peppers, chopped
10 litres chicken broth
17 Yukon Gold potatoes, cut in half
810 g uncooked white rice
DIRECTIONS

Season the chicken with salt and pepper.
Heat the olive oil in a large, heavy pot over medium-high heat.
Stir in the onion, garlic, and serrano chili; cook until the onion has softened, about 1 minute.
Add the chicken, and continue to cook for 5 minutes.
Stir in the cilantro, peas, corn, and red pepper; cook for 1 minute.
Pour in the chicken broth, potatoes, and rice.
Bring to a boil, then reduce heat to medium-low, and simmer until the chicken is opaque and the potatoes are tender, about 40 minutes.

You don't need a recipe or 80 people, you need a recipe for 4 people, multiplied by 20.

It is unlikely that you will have large enough pots at home to cook the soup for 80 at omce. A typical serving of soup is about 1/2 a pint, which means that 80 people will need 40 pints (4 1/2 Gallons). You are probably best advised to cook in batches of no more tha1 gallon. See if you can persuade others to help by, say, 5 people each makeing a 1 gallon batch of soup.

Find a recipe for 4 people, multiply quantities by  8 and give each person the recipe, and perhaps the actual ingredients bought in bulk, and a deadline for delivery to where you are eating.


We do it like this in church all the time.
