semolina flour

can anyone help, seriously frustrated! i am trying to follow a recipe in Jamie's Italy book which calls for the use of semolina flour to make the pasta. could i use regular OO instead? help

Hi Sticky,

Semolina is different from 00 Four. I believe it's coarser for a start.

Why don't you tell us what recipe you want to make?

also NO NEED to be frustrated- only NEED to buy semolina -in flour aisles- in EVERY mini/super market- low cost...-nothing special to semolina...you just happened not to know this...

Hi I'm wanting to do the pizza recipe in Jamie's Italy book and it lists semolina flour, does anyone know where i can get this in Nottingham please? Or is there an alternative? help

You might be able to get it in a large supermarket, but otherwise, your best bet would be a deli which carries Italian ingredients. I just had a look on Google and there seem to be loads of delis in Nottingham city centre:

I would go with 00 flour, it's the same thing but thinner. It's from wheat not corn.

I would use 50/50 or more semolino than 00
otherwise the fresh pasta is too sticky and weak hmm
