Kitchen knives
Hello everyone,
I'm new here and I am on a mission to buy some new knives for the kitchen. Does anyone have any recommendations?

As a purely personal opinion I have to say Zwilling J A Henckels Five Stars, but it's a very subjective issue. Welcome to a fellow Ontarian; Leafs or Sens?

Hey there and welcome to the forums snakeman!
Knives are, as the kind mr grumpy already mentioned, a very personal thing. These are my suggestions:
You do not need many knifes. Basically you only need a 18'' (inch) cooks knife, a smaller vegtable knife, a bread knife and a speadpeeler (not quite a knife, though).
You should spend more money on buying good quality on those three, rather then buying a cheap set as the will go blunt very quickly. J.A. Zwilling and Henkels 4**** Line (the 5***** is just the same, but with a non-slip handle, ergonomically formed) is very good. Sabatier is another high standard producers which I can recommend. Jamie uses the J.A. Z&H 4**** and some Sabatier.
If you do not want to spend that much money on a knife, I can recommend Victorinox. You will get good quality for your money but the blades are pireced instead of forged, which makes them - in my opinion - a bit wobbly when chopping hard stuff like onions and carrots.

Thanks. I was looking at some today and saw some nice Japanese knives made by Henckel. Very expensive though.
Well Mr. Grumpy...neither. Never watched a hockey game in my life. But if I had t to chose probably the Buds. Closer to TO than Ottawa. Saturday nights are reserved for eating good food and drinking wine and......you get the picture. ![]()

Oh, I just saw some part of my post wasn't posted. Here I go again:
I presonally use a "Thomas. Member of the Rhosentalgroup" 8'' cooks knife which was about 60 euros (~80$, ~50£). I am well chuffed with it as it is a very sturdy kitchen knife I use for almost everything form chopping to arranging. But I am not sure whether it is still available as the Rosenthalgroup went bankrupt last autumn's financial crisis.
Another brand I can highly recommend is Wüsthof. A german high-standard knifeseller. Always highend steels and perfect manufacturing gurantee a professional product, but at a very high price.

Oh yes, of course...
I guess a 18'' knife would be helpfull if you got someone disturbing you in the kitchen

Torilla, thanks for the link to the Henckels instructional video. Apparently I'm using the wrong knuckle as a guide, but I think that trying to change is likely to result in having one fewer from which to select!

We have used the Henckels Twin Cuisine knives for the past 3 years and they are excellent. Although a little expensive I think they are worth it.
