Creme Fraiche Question
Can you tell me what Creme Fraiche is? Is it similar to sour cream? If a recipe calls for it, what can I substitute if I can't find it?

Crème fraiche, "fresh cream"; is a soured cream containing about 28% butterfat. It is soured with bacterial culture, but is thicker, and less sour than sour cream.
You can easily substitute it with sour cream (as long as it is thick enough).
Depending on what you are cooking you can also use yoghurt or even very young cheese (like Bressot). The ones that you would use as bread spread.

Denise - I make it periodically for my husband (who needs to eat lactose free - by fermenting for longer, the lactose is digested by the bacteria, and he can eat it), so that he can enjoy creamy foods from time to time!! It's really easy to make
