There's nothing new under the sun!
Creme fraiche can be added to a hot dish and it won't 'break' or separate. The flavor and texture it adds is just a little different than sour cream. Usually sour cream is stabilized by stirring it with flour and water first, then simmering it in the dish for the last few minutes of cooking. Some people mix heavy cream and sour cream to make it more like creme fraiche in taste and texture.
