At Mary Baldwin college in Staunton VA. we created a bar titled Destination: Local-Fresh that promises at least one local-fresh item per meal and may be entirely local depending on season. Currently we've purchased 6 whole beef, 7 whole pigs, and 144 chickens from a local farmer and we use the entire product throughout the bars and menus. It's worth the effort in quality, nutrition, taste, and can actually save money. I will attempt to attach and share the information at some point. It's exciting to say the least and students are showing signs they understand the impact for their personal health and the health of local infrastructure. Good luck to all!
