Hmm I have to say that the "wet curing" and "plumbed up" things sounds absolutely gross  puke  I'm going to post back later, either here or start a new thread do to with chicken. You'll soon find out why.

Still using the same eggs as Jamie, unless someone else beats me to the egg shop.
Always free range though.
Clarence Court  Rare breed. As with most things, the breed makes a difference. I think they dont lay as much, a better quality egg is the result.
