What is your favourite pudding that your mother used to make for you?
In issue 25 of Jamie Mag, we all handed over our most favourite pudding recipes that our mothers used to make us.
Is there one in particular that makes you feel nostalgic for your childhood?

As my mother used to work, most of the cooking was done by my Dad and I. We didn't really do puddings so most of my childhood memories of puddings are school dinner related. Queen of pudding was one of my favourites, so thanks for the recipe.
I may give it a try over the coming weekend. We tend to eat a bigger meal on those days, we often look for something lighter for later in the day. This can sometimes end up being a sweeter thing. and this could well hit the right spot.

probably blackberry and apple crumble as it she was usually late in putting it into the oven and so did not get too burned !
My mother had no interest in cooking and was not the greatest cook , she did make a few pudding , her staple being baked egg custard which always was cooked too fast and has a syrupy, watery liquid in it .
She made the occasional apple pie and sometimes a fruit crumble.
I really cant remember anything else apart from the christmas pudding at christmas dinner and that was always bought .
Sometimes one of my sisters or I would make a steamed pudding .. I enjoyed those !

I was lucky to grow up with lots of good puddings, but as a kid I loved anything that was in individual portions instead of one pud served to everyone (single portions seemed very posh!). So here's the recipe for:
Castle Puddings:
2 Eggs.........plus their weight in.....
Butter
Sugar
Flour
1/2 tsp Baking powder
2 Lemons, grated zest & the juice
Method:
Beat together the butter & sugar 'til light & creamy.
Beat eggs lightly.
Sift flour & baking powder. Add zest & stir in.
Add egg to creamed mixture (if it looks curdled, don't worry), beat well.
Add flour a spoon at a time, folding in carefully.
Add lemon juice..............batter should be at "dropping consistancy" (ie just plops off the spoon when it's tapped).....use an extra spoonful of milk if needed.
1/2 fill dariole moulds with batter.
Bake in moderate oven for 20mins, or until cooked.
Serve hot with a spoonful of lemon curd or custard.

My mother used to make delicious ground rice puddings, but my all-time favourite has to have been my grandmother's junket ![]()

I had forgoten about ground rice pudding ...
sometimes ok sometimes solid and sometimes had quite a few lumps in it !

My mom didn't make very many desserts, so I'll have to go with my grandmother's bread pudding - or her rice pudding. It's a toss up - I love both of them.

Rice pudding was one I loved that we had most Sundays during Winter (if I remember rightly).
But I think my favourite was the blackberry pie she would make the day we went blackberry picking at the end of Summer. All the other blackberries would go into jam.
O but then there were golden syrup dumplings....
