I'm working tomorrow so I won't be able to do it tomorrow but I'll do something through the week.
Frizz, suggest you throw the in/out-laws with the boring palates a few snags and chops and save the Thai for another day to share with people who have more adventurous palates and who'd appreciate it.
And I found the Japanese mayo (thank you). My sushi skills are improving

Me, I've not eaten much "Southern US" food but am keen to try (hold the okra, though).a lot of the ingredients are not readily available here, though, probably why I've not cooked it much. Could murder a corn bread with chillies at the moment.

Sorry, I've always used directions from the net - it's simple, they're all similar - I like it with some toasted peanuts on top.

Finished work earlier than expected so will drag out pantry and balcony staples to make Thai fish and crab cakes, jasmine rice and steamed Asian greens.
Would be easy to do Thai chicken in coconut but my daughter's coming up next weekend and has already put in a request for it (so what's new
)? Twice in a week is too much for me, I'm afraid (much as I enjoy eating it).
Mango with sticky rice sounds good but I can't be bothered going out just to buy a mango ![]()

I made a quite basic satay dipping sauce that everyone loved & marinated cubes of chicken in soy, ginger & garlic before threading onto skewers & BBQing.

Frizz, I moved away from the cubes a long time ago (we all know I'm lazy). Now, whether it's chicken, lamb or prawns, I trim it, cut it into strips and thread it (concertina-like and then make it "flat")onto the skewers. Put it into a shallow Pyrex or similar dish that has the marinade in it and turn occasionally to coat.
Whoever's eating has to be able to use a knife and fork, but who cares?
Sounds yummy, BTW.
Fish cakes are ready ![]()
