1/2 a clove garlic mashed
2 tbsp light tahini
juice of half a lemon (plus finely grated zest if you'd like)
juice of half an orange
1/2 - 1 tsp honey
2 tbsp olive oil
salt and pepper
mix together in a small bowl.
This is great with roasted summer vegetables like capsicum, zucchini, red onions etc also really yummy as a dressing for a quinoa salad. yummy  yummy

What about plain old lemon/orange/lime juice and sugar/honey whichever combination you prefer.
or
mayonnaise, a splash of pouring cream and some seeded mustard, add some citrus juice if you want more tang.

I often make dressing like BritFinn does with just lemon juice, olive oil, salt, pepper, garlic, and sometimes an herb or two.

Either that, or you can make ranch dressing or any kind of creamy dressing, but substitute Greek yogurt for most (or all, depending on your preference) of the mayonnaise. It's healthier and tastes better, in my opinion.

I like a chicory, orange, tomato and walnut salad with a dressing of OJ/OO/mustard and chives.

I replace vinegar with lemon juice sometimes.  It gives a very good flavor.

As someone who also despises vinegar in all forms, I would just like to let everyone know that mayonnaise and mustard both contain vinegar. I saw quite a few people suggest using that instead, but if you hate vinegar, you don't like those things either generally. Ketchup, hot sauce, barbecue sauce and many other sauces also contain vinegar.

I usually mix: lemon or lime juice (i kind of prefer lime), sugar, basil, garlic, sesame oil and some soy sauce.

Also good is using a cashew cream base (soak cashews, then blend with fresh water) and adding other flavors: garlic, maple, herbs, etc.

You can also use yogurt as a base, which I think someone suggested.

It's always nice to meet someone else who hates vinegar as much as I do! lol I get a lot of flak for it. :P

Oh, I also forgot to add that you can make a nice, creamy dressing with blended avocado as the creamy base, add herbs, citrus juice, salt, pepper & any other flavors you like (garlic, oil, nuts, for example).

They don't if you make your own and substitute lemon juice smile.
