I had left over pizza last night. Tonight I'm making home made fried chicken and macaroni and cheese. We are working an overnight shift so I'm feeding my staff.

Spinach, ricotta and sundried tomato cannelloni in a fresh tomato, garlic-basil sauce...with a fresh spinach salad.

Have leftover roast chicken from last night, so will tackle the carcasse and what's left, and make a chicken stew with tomatoes, garlic, herbs, chickpeas, and chorizo.. might serve that with some couscous...

Pork mince with onion, garlic, thyme, parsley, ginger and lemon served with rice for my OH, cauliflower "rice" for me, and roasted butternut squash.

Spanikopita with "Greek salad", made the "old" way. Leftovers from last weekend when my daughter was up and requested it.
After Tuesday's 15mm, will do Jamie's take on spinach and feta parcels next time. Will leave the salad as is.
