Coco, forgot to say that the salad sounds especially delicious and festive. Thanksgiving (almost) on a plate/ in a bowl 
Smoky beans withe chorizo, pumpkin and baby spinach tonight with a poached egg on top and toast to mop up the delicious sauce.

Last night I varied the Thai chicken in coconut milk by substituting firm fish fillets for the chicken. Worked well. Served over jasmine rice with wilted Asian greens on the side.

Last night we had a rich beef, red pepper and paprika stew (loads left over for lunches, too!) with fried onion, cabbage and Brussels sprouts, and tonight I'll be making a moussaka to be served with broccoli.
