razer shells, are they good?

I saw some razer shells when a walked pasted a fishmonger.
What do they taste like?
Are they good?
If so, have you got any quick and easy recipes?

Razor clams?  They're a little like mussels, you can use them in similar recipes such as spaghetti al vongole.

OK, how to prepare mussels: put water in the kitchen sink.Are these NZ green-lipped mussels which are dead, due to Oz quarantine laws. Either way, scrub them with a tough brush, remove the "beard" by just pulling it away.
Discard the "beard".

Keep the mussel and the shell for presentation.

Razor Clam Fritters 

1 C. chopped razor clams (reserve the liquid)
1 bottle flat beer
1 1/2 C. pancake mix
6 green onions - cut very thin, use greens
1/2 green pepper - cut very thin
1 stalk celery - cut very thin
Mix onions, celery, green pepper and pancake mix together. Add clams and juice to other ingredients, then add beer till you have a very thick mixture that can be dropped from spoon into hot oil at 375 . You may not need all the beer because of the clam juice. Drop by spoonful in oil - cook 2 min. per side - test, if not cooked- drop by smaller spoonfuls.

Spaghetti & Clam Sauce 

1-1 1/2 C. clams -grind about 6 big razor clams (reserve the liquid)
1 C. dry white wine, very dry sherry or vermouth.
1 C. chopped onions
1-2 cloves garlic
1/4 C. butter and 1/4 C. olive oil
1-2 tsp. oregano
1-2 tsp. basil
3 Tbl. Romano or Parmesan cheese (grated)
Salt and pepper to taste
2 Tbl. parsley if you use dried - 1 cup if you use fresh-chopped
1 Pkg. spaghetti noodles cooked
Saute onion and garlic (crushed) in butter and oil combined until almost tender. Add spices. Combine wine and clam juice and add it at this point - simmer to reduce some liquid then pour in the clams, parsley and cheese. Simmer for a few minutes to warm up clams. Add salt and pepper. Pour the whole pan of sauce on your cooked spaghetti. Sprinkle on more cheese as desired.

simple spanish mussels recipe:

remove the beards from the mussels.
heat a lug of olive oil in a deep saucepan.
squeeze in 1 lemon and add the squeezed halves.
add a sprig of parsely.
some freshly ground black pepper.
add the mussels.
pour over a lug of white wine.
cover with lid and steam till the mussels have opened.
cooking only takes a few minutes, dint leave them too long or they will become tough and chewy.
discard any unopened shells as these are not fit to eat.
place the mussels in a large bowl,strain the cooking liquor over and serve with a sprinkle of fresh chopped parsely.

i allow 1kg of mussels per person as we are mussel-lovers but 1/2 to 1kg is enough for most people.

sometimes once the mussels are cooked i remove them from the liquor and strain this into a fresh pan, reduce over a fierce heat and add fresh cream before pouring over the warm mussels.

you can also add fresh green or red chillies, chopped finely or as an alternative go 'thai' and use spring onion instead of parsely, lime instead of lemon, some chopped ginger and coconut cream, right before serving stir in some chopped coriander.

as for razor clams just grill em on the bar-b and serve with a grilled crusty bread drizzled with olive oil and tomato salad.

Razor clams taste sweeter then clams and have much more meat then mussels.

When cooking with fresh shellfish, simplier is better. Many restaurants serve them in half shell, but at home, I will just cook the whole clam in boiling water for 10-15 minutes and add some sauces e.g. garlic oil, soy sauce & coriander.

Remember to check if they are alive before consuming. Tap it on a hard surface to see it is closing its shell before cooking.
