Pickle recipes.
Hi Guys,
I am after some recipes for pickled beans, something spicy perhaps to go as a side and in salads.
My beanstalks are producing rapidly and I'd like some preserving options.
All suggestions welcome. ![]()

I did this one last year when I had a glut
Spicy Pickled Green Beans
Ingredients:
1 pound very fresh green beans (nice and crisp), ends trimmed
2 cups rice vinegar
1/4 cup granulated white sugar
2 Tablespoons salt
6 small red chillies
1 teaspoon peppercorns
1 lemon, sliced (seeds removed)
Directions:
1. Bring a medium pot of water to boil and blanch green beans until tender-crisp, 2 to 3 minutes. Drain and put in a large heatproof bowl.
2. Bring 2 1/2 cups of water to boil in another medium pot with vinegar, sugar, salt, chillies, peppercorns, As soon as the liquid boils, pour over beans and add the lemon slices. Slit 3 of the chillies to let seeds spill into liquid then add sliced to the beans. Jar

Interesting. I've never thought of pickling beans. I'm thinking of growing some this year, so will file this idea as one to come back to.

I had pickled spicy asparagus last summer. It is so surprisingly crisp, really nice appetizer with drinks.

Mother in Law pickles everything, i have found a basic recipe that i know she has used in the past.
