Oil the meat, or the pan...??
Following on from last nights "Food tube" launch, Gennaro oils the pan and adds the chicken breast, now when I'm cooking (frying) meat I start with a dry pan, and add seasoned, oiled meat...unless we are talking mince or small medallians etc.
Which do you do boys and girls ??

It depends on what I am cooking, but I have done both. Usually when I cook a steak I oil the meat not the pan. If I'm cooking it with something else, like veg I oil the pan.

For steaks, I brush them with oil but never season them until they're almost cooked.
I've cooked oxtail stew today and brown the pieces in a little oil first to seal in the juices.
Pot roast brisket gets well and truly sealed in about a tsp of oil before turning the heat down to minimum. Don't season that either until well on the way.

I oil the steaks if I an cooking them but other things like Chicken I put a little oil into the pan.

Right, I'm cooking chicken breast tonight (On the bone) and I'm oiling the breast...I might attempt one of my infamous videos that go horribly wrong..... ![]()

I usually season and oil my meat first. if i'm doing something like a quick fry or browning i will add a little oil to the pan.

Usually the meat (always if bbqing-otherwise clouds of smoke and the oil is more likely to start fires).

We oil the meat if it's going on the BBQ.
I had a horrible mess the other week with burgers cooked on the griddle pan in the kitchen. I oiled the burgers but somehow they stuck to all the ridges and made a right mess - any tips for me? I did wait until they were properly cooked before I flipped them, once only.

I've had that happen, Grub:/. Use a normal pan now for such things. Sorry not to have been of much help.
