30 Min Meals broccoli confusion.
Hi.
I've been reading through 30 Minute Meals and I'm getting quite confused by all the different types of broccoli Jamie calls for.
He lists the four following types.
A Large Head of Broccoli.
Purple Sprouting Broccoli.
Tenderstem Broccoli.
Sprouting Broccoli.
Now I've seen the seeds for purple sprouting broccoli for sale and wikipedia tells me that Tenderstem is known as Broccolini here in Australia but I'm not quite sure what the other two are.
I'm assuming the "large head" is the regular stuff you get at the supermarkets, also known as Calabrese, yes?.
But what on earth is sprouting broccoli?
Any help would be greatly appreciated.

I would think that the head of brocolli is just that a head of brocolli and the sprouting is the same as the purple sprouting.

I would take "a large head of broccoli" to mean calabrese - the big fleshy green one that looks like a tree.
Purple sprouting broccoli is a type that forms lots of little heads rather than one big one, and is purple. I can't find any alternative names for it - I'm pretty sure it's the one the Italians mean when they say "broccoli", as opposed to "calabrese".

Brassica oleracea italica x alboglabra = broccolini = Tenderstem (small branches with green flowering tops)
Brassica oleracea var. italica 'Purple Sprouting = purple sprouting broccoli (small branches with purple flowering tops)

A large head of broccoli does indeed refer to the Calabrese variety. It is the more common variety of broccoli and you should be able to find these in most supermarkets and grocers. Purple sprouting broccoli is a seasonal broccoli available in the UK from January through to May – if you can find the seeds where you are in Australia then you must be able to find the actual vegetable in green grocers or supermarkets. It is very similar to tenderstem (broccolini) in size (long, thin stems, small head, leaves) except it has gorgeous purple leaves and head. When Jamie mentions ‘sprouting broccoli’ in his recipes he is referring to purple sprouting broccoli. If you can’t find the purple sprouting broccoli then the recipes will work just as well with broccolini or normal broccoli. Or if you wish you can substitute the broccoli for another type of green – such as beans, asparagus or even spinach. I hope that answers your question.

Thanks for the reply Food Team. I just picked up the 30 Min Meals dvd and checked the Rib-Eye stir fry recipe where Jamie uses "sprouting broccoli" (he also uses it in the Kinda Sausage Cassoulet in place of Tenderstem) and it doesn't look like purple sprouting broccoli. For one thing, it's green and is thicker. Are you sure they're supposed to be the same thing?

I find they are interchangeable so long as you adjust cooking times to suit the chunkiness or tenderness of the pieces. At times I have exchanged big strong Calabrese broccoli for leafy tender Asian broccoli, perfectly successfully, by cutting it in thinner pieces.

PS Always believe the recipe rather than the photo! But in this case I would just use what you have to hand!
