I used to make a type of curry with pork tenderloin but haven't made it for years as I lost the recipe. It had a tin of tomatoes, onion, garlic, ginger, turmeric and cumin and maybe other ingredients, does this sound familiar to anyone??

So many diversity for cooking pork fillet! It was very inspiring. I, like koukou, have only made JO's recipe which was amazing but I haven't got much experience.

Pork fillet stroganoff...
cut your pork into medallions, dust in flour seasoned with paprika, pepper and...salt..(As you are on a low sodium diet, don't add the salt)
fry the medallions off just to seal, remove / set aside.
one small onion, finely chopped, garlic either crushed or finely chopped, some sliced mushroom (I use organic Portabella)
Soften the onion and garlic in a litlle oil, increase heat, add mushrooms cook until softened, sprinkle over a little more paprika.. when the pan is back up to heat, return the pork to the pan, add a splash of brandy and let the alcohol burn off, add some double cream or creme fraiche..and cook till nicely hot.. at this stage you can add a squeeze of lemon juice if liked...
Taste the sauce and adjust the seasoning as necessary..
Serve with rice, possibly some green beans...add a sprinkle of flat leafed parsley if you want...
