Leftover canned Anchovies
Opened a can yesterday with 8 fillets in and only needed 2. Have frozen the 6 left in 3 packs of 2 and put them in the freezer. Don't know if it will freeze with the oil on - time will tell.

I've never frozen leftover anchovies, but would probably use the excuse to make some olive tapenade with some of them. It keeps well topped with a little olive oil. If you are making a bolognaise sauce, saute two in the pan with the onions, gives a great depth to the flavour. Don't know if Mada would agree. Let us know how the freezer worked. :-)
