The winter of the baked potato

It seems that every winter we have a dish that gets done over and over (to death even). Last year it was osso bucco (from the Family table book). The year before soup. And a few years back it was risotto, to the point mr rabbit can no longer face mushroom risotto.

This year it's baked potatoes. So far our favourite topping has been mince and baked beans cooked with a taco seasoning, served with the potatoes, sour cream and avocado.

Any other ideas for us to try?

Winter?  It's summer where I am.  90 degrees out.

Speaking of potatoes, I did see something on Pinterest of interest: baking potatoes in chicken broth.  Supposed to make for a crunchy outside and a fluffy inside.  Has anyone tried it?  I don't know how long to leave the potatoes in the oven.

I'm in the southern hemisphere. But it'll still get to 22C here today.

I think you'd have to par boil and roast with oil to get that effect.

have you ever done hasselback baked potatoes?
once it is almost done  I brush the top with garlic butter and turn on broiler to get the top crispy brown.. topped wth crumbled bacon and chives or green onions and sour cream.

My favourite is a small pat of butter, tasty cheese, sour cream, some crispy bacon and finished with coleslaw. Probably not that good for me but delicious!

slice them 1cm thick and let them go in a little hot olive oil, in a non sticky  pan or iron skillet until crispy and done, when they are roasted add a dust of powder veg stock and a little butter to colour
