Re: September Cooking Challenge: EGGS!!

its generally poached eggs on toast that get eaten here in the uk.
I have found that the baked beans that we get here and served on toast are different to the baked beans that we bought in America , the baked beans  that we bought whilst we were in America were fairly sweet as I remember.  The family liked them but i wasnt keen on them but that was not suprising as I dont really like baked beans !

Yes, baked beans!  It's a wonderful thing we have here that goes very well with our american-style bbq.  They're a little sweet, tangy, and smoky.  I've never had a proper full english breakfast.  Maybe I should work on that!  Can you share a recipe for those beans?

Re: September Cooking Challenge: EGGS!!

So far we have submissions from Ashen, Earthmum and MsPablo!  We've seen some wonderful things here, things I can't possibly do like curries, pastries and meringue!  Keep them coming!

I made a very simple french style omelet.  I used 3 eggs room temperature and threw in a pinch of fresh dill.  I made it the traditional way keeping it simple and adding a little cheddar in the center.  The outside was slightly firm and the inside was creamy custard-like.  Touches of brown on my omelet upset me very much.  Luckily this one was a keeper.

That is one gorgeous-looking omelette. Mine never come out like that - I get too impatient and it all becomes one delicious mess.

Re: September Cooking Challenge: EGGS!!

my breakfast today.. creamy scrambled eggs on toast.

ingredients.

two eggs
butter
chives
salt and pepper
toasted cracked wheat bread

method is similar to what gordon ramsay does in this vid.
http://youtu.be/PUP7U5vTMM0

I used only 2 eggs,  a lower heat , I do beat my eggs very well before adding to pan .(the point where they turn pale yellow) .  the reason my eggs look more like a custard than his.

I don't add creme fraiche , I just add a small bit of butter at the end.

I don't season with s&p or add the chives til after the eggs are on the toast.

Re: September Cooking Challenge: EGGS!!

Nice entry.  Funny you should bring up Gordom Ramsey, I've tried his scrambled egg method many times, sometimes with creme fraiche sometimes without.  It comes out so creamy, more like a savory dessert!!

I wonder how Jamie scrambles his egg, but here's Jamie's omelette tutorial:

Hi koukou I love eggs - any which way but clearly not had them in any inspiring way. I'm off on an egg hunt - I'll be back.... tongue

There's less than a week to go!

Creme caramel.  Clearly I wasn't able to contain myself and took a forkful off the front before I took a picture haha.

Re: September Cooking Challenge: EGGS!!

CREAMY CHEESY POACHED EGGS

1 cup skim milk
3/4 cup (6 oz) American cheese (sliced or shredded)
1 Tbsp butter
1 Tbsp flour
4 Extra Large eggs (or real egg whites)
Salt & Pepper to taste

Melt butter in skillet. In a jar, mix flour with milk and pour into 8 inch skillet with cheese. Stir until the cheese is melted. Cook 2 minutes or until mix is thick and bubbly. Crack an egg (or just egg white) into a bowl and gently slide into mixture. Repeat with remaining eggs around the skillet. DO NOT STIR! Cover and cook 3 to 5 minutes until desired doneness of eggs. Salt and pepper to taste. Eat "as is" in a bowl or serve over toast / English muffin.
