wild boar ragu

I want to make a wild boar ragu. The recipe calls for shoulder, but I can only get boar steaks.

Might these work or would the texture be wrong?
Would I be better off using beef rather than substituting the boar shoulder?

Very seasonal!
I had a piece of young wild boar a few weeks ago. It tasted great. I would prefer to use any complete joint or steak in preference to a ragu. Concentrate on a great sauce to go with it...mine was based on Cranberries!

Mr Spice , my husband loves that rich meaty Wild boar stew that he gets in Budapest when he is there . So I can see that a wild boar Ragusa would work really well.

If you can only get wild boar steaks then it's best to use them as steaks , the grain of the meat and intensity of flavour would be a bit different to that of pork shoulder.

Can the place where you bought the steaks from get you some pork shoulder to try the Ragu  on another occasion.

Thanks both for your advice. In the end I got a magnificent piece of Moyle beef and this proved a great substitute.
