Hello Jorge!
I was a diabetic, now gone into reverse, hooray.  Never used a diabetic recipe as such.  Everything in moderation is the policy to adopt.  Needless to say, cut out the sugar and too much fat.  Plenty of special recipes to be found on Google.
Are you Type 1 or 2?
Important to eat regular meals.

Brilliant recipes to replace mashed potatoes. Very easy too.
Cut florets of a Cauliflower into a microwave safe bowl.
Microwave until hot.
Blend into a mash. I like to use a hand blender for more control and less mess.
I hate most veggies but this is a very good substitute for mash and not cauli like at all.

I've made a sugar-free, flourless chocolate cake using yakon syrup - small layers filled with whipped cream.  It was very tasty.  I think the yakon syrup worked best with the whipped cream because it is subtly sweet.

Hi there,

Here is a recipe for baked oats. It has cinnamon in and apparently it helps to regulate your sugar levels.... You could use a natural sugar like xylitole as a substitute for sugar...

There are also other recipes that would work for diabetics.
