1 ½ parts Bombay Sapphire gin
½ part lemon juice
2 dashes orange blossom water
⅓ part sugar syrup
2 parts cream
1 egg white
1 dash soda water
1. You can either buy pre-mixed sugar syrup or if you want to make your own. Put all of the ingredients into a shaker without ice and shake hard to help the egg white turn to foam
2. Put ice into the shaker and shake hard for another 20 seconds to chill the liquid really well
3. Strain the mix into a glass filled with ice and top up your glass with soda water

Wild fish caught in areas where stocks are plentiful are sustainably sourced, as are farmed fish that are reared on farms proven to cause no harm to surrounding seas and shores.
When buying either wild or farmed fish, ask whether it is sustainably sourced. If you're unable to obtain this information, don't be afraid to shop elsewhere – only by shopping sustainably can we be sure that the fantastic selection of fish we enjoy today will be around for future generations.
