Method

Preheat your oven to 180°C/350°F/gas 4. Rub one large or two small baking sheets with a little olive oil.

In a bowl, mix together the flour, salt, pepper and chilli flakes. Pour in the olive oil and stir it in with a fork. Continue stirring while you slowly pour in about 200ml cold water. You might not need it all – use just enough to form a ball of dough. You don't want it to get too wet!

Roll out the dough into one or two rectangles, as thinly as you can. Place the roll(s) on to the prepared baking sheet(s). Drizzle with a little olive oil, and sprinkle with some more salt and chilli flakes if you like. Bake in the preheated oven for 30 minutes until golden and crispy enough to snap when broken.

To serve, break the large cracker(s) into irregular pieces. Any leftovers can be stored in a tin.

Wild fish caught in areas where stocks are plentiful are sustainably sourced, as are farmed fish that are reared on farms proven to cause no harm to surrounding seas and shores.

When buying either wild or farmed fish, ask whether it is sustainably sourced. If you're unable to obtain this information, don't be afraid to shop elsewhere – only by shopping sustainably can we be sure that the fantastic selection of fish we enjoy today will be around for future generations.
