Breakfast ideas - baked eggs lots of ways

A delicious brunch at home is the perfect way to kick off the weekend. Stacks of golden waffles and pancakes, smoked salmon, crispy bacon, eggs all kinds of ways, and maybe even a cheeky cocktail (or two), brunch is a brilliant way to share a little joy.

We’ve selected our favourite brunch recipes from eggs Benedict to American-style pancakes and everything in between, so get cracking and up your brunch game this weekend.

Get an eggs start

Eggs are a staple on the brunch scene – poached, scrambled, boiled or fried, they provide the basis for many brunch dishes. Master the basic techniques to get them just right, and you’ll never look back.

Keep it classic

They say you can’t beat a classic, and that rings true in the brunch world. Whether it’s soft, pillowy scrambled eggs with smoked salmon, a pile of comforting kedgeree, or a spicy potato hash, some iconic brunch dishes will never go out of fashion.

Make it veggie

Ditch the bacon and let veg take centre stage. Choose from roasted mushrooms on toast, Jamie’s take on shakshuka, or spice things up with a Mexican-style breakfast on a crunchy tortilla.

Light & bright

A healthy brunch is a great way to get some of the good stuff in, early doors. Whether you keep it simple with asparagus and poached eggs, put a green twist on your shakshuka, or stick to good old avo and rye.

The sweet spot

If you prefer to start your day with something sweet, there’s lots to enjoy. Pile pancakes high with fruit and a drizzle of honey, or top yoghurt with roasted fruit and crunchy granola. And there’s Jamie’s breakfast doughnuts to really get excited about.

Something special

On special occasions, an indulgent brunch is the perfect way to kick things off. Stay classic with fluffy muffins, ham, eggs and hollandaise, or really go for it with waffles stacked with bacon, eggs and maple syrup. And if you haven’t tried eggy crumpets yet, you must! Serve with a Bloody Mary or mimosa for a proper boozy brunch.
